Earlier this week you added three different canned vegetables to your grocery list or online shopping cart.

Today: Heat and enjoy one canned vegetable.

When preparing canned vegetables, remember that the vegetables were already cooked as part of the canning process. You only want to warm them up since they are easy to overcook. Overcooking is what can cause our vegetables to be mushy.

Also remember that canned vegetables are soaked in canning juices, which tend to be salty. Ideally, you bought low- or no-sodium canned vegetables.

How to Prepare Canned Veggies: Drain the canning juices in a colander, or by opening the lid most of the way and using it to hold the veggies in the can while draining the juices. Then rinse them with cold water.

Add the vegetables to a microwave-safe bowl. Add several pinches of each spice from one of your spice palettes. Drizzle extra-virgin Olive Oil (EVOO) on top and then toss to coat.

Heat in a microwave until they are ready to eat.
