How To Make Quick Dill Pickles – Refrigerator Pickle, Easy Pickle

Big thank you to my aunt for teaching me this family recipe. There is nothing like a homemade dill pickle, its such a great snack – salty, flavorful, and with a bit of spice. I make a whole bunch of jars each year, and then give them to friends and family and everyone is always delighted to receive a jar of home made pickles.

Ingredients:
Cucumbers
Grape and horseradish leaves (see video for substitutions)
Garlic
Dill Flowers (see video for substitutions)
Red Pepper Flakes (optional)
Salt and sugar for brine

Brine:
Basic proportion is for each 1 liter add two tablespoons of coarse salt and one teaspoon of sugar.
1 Liter = 4 cups = 1,000 mL

Packing the Jars:
layer leaves, dill flower, add 3 cloves of sliced garlic, and red pepper flaker, pack with cucumbers, and add 1 clove garlic sliced, then repeat the layering of leaves on top same as the bottom.
Pour the hot brine, almost to the top
Cover with lids but not all the way
Leave on the counter overnight
Then close the lids all the way and refrigerate for 2-3 days. On day 3 you can enjoy a flavorful and crispy pickle!
