High capacity industrial filled pastry production line – bake-off Cheese rolls and apple turnovers

How to make pastry, danish pastry on an industrial scale? This video shows an inside-the-factory peek at one of AMF’s customers. Producing frozen Cheese pastry rolls and apple turnovers on the same production line, plus many more products since their system is very flexible.
Laminated blocks of pastry dough come from a dedicated block laminating line, which produces them on stock and cools them before use.
This fresh dough is sheeted or rolled out to a sheet, where also re-work dough is added, so no waste is generated.
An AMF tromp depositing machine, deposits batches of apple filling for the apple turnover, or a constant deposit of Cheese filling for the chees roll products. Quick changeovers can be done for flexible production schedules, with no tolling needed the operator can switch the line in a few minutes, changing just recipes and wheeling in new ingredients.
The AMF Tromp folding robot saves labor while folding the apple turnover dough into the triangle and pressing it firmly. Sugar is strewed on top before freezing for a bake-off at their customer locations, like in retail.
In the case of the Cheese pastry roll, a top-lit is added with decorative cuts that open up while baking.

An AMF spinning disc sprayer, adds a layer of egg wash, and the Tromp waterfall applicator, tops with a layer of Cheese. Cheese is not wasted, since the return system feeds it back to re-use during the production cycle.

All products are for the bake-off segment and, therefore are deep frozen and packed in boxes for storage and transport.
