Easy Breakfast Potatoes

Both versions of this breakfast skillet recipe are equally delicious! This is a classic but easy breakfast potatoes recipe. They are also referred to as pan fried breakfast potatoes or sometimes skillet potatoes. In any case they are delicious! The how-to specifics are covered in the video.
The seasoning is what really makes these fried potatoes special. See below for ingredients.

Depending on the amount of time and effort you want to put into this recipe, here are two versions:

EASIEST/FASTEST –approx 15 minutes
Frozen diced potatoes*
Onions (optional)
2 tablespoons vegetable oil or butter**
Seasoning mix*** (2 tablespoons)

Thaw/pre-cook potatoes in a bowl in microwave for 3-4 minutes (for 3-4 cups potatoes)
If onions are desired then start them in the pan with oil while potatoes thaw
Make sure to blot potatoes with a paper towel to remove excess moisture
Dump carefully into hot oiled pan
Put on seasoning
Fry to desired level of doneness

*Sometimes labeled as “Southern Hash Browns” but usually just called “diced potatoes” – as an option, you can also buy “Potatoes O’Brien,” diced Frozen Potatoes with onions and green peppers already included.
**Olive Oil is not recommended as it makes it very difficult to brown the potatoes
***Per the video (2 parts seasoned salt, 1 part garlic salt (or garlic powder), 1 part sweet paprika

AUTHENTIC RECIPE (this is the version I served in the restaurant)
Peeled, diced potatoes* (one medium-large potato per person)
Onions (optional)
2 tablespoons vegetable oil or butter**
Seasoning mix*** (2 tablespoons)

Soak diced potatoes in cold water for at least an hour (overnight in fridge is best)
Rinse and drain potatoes and recover with water, lightly salt water if desired
Boil on stove or microwave until they are firm but not hard (see video for demonstration of testing)
Drain well, blot with paper towel
Cook onions for a few minutes (optional)
Dump carefully into hot oiled pan
Fry to desired level of doneness
