The healthiest vegetables are the ones you will eat. Many people have various opinions on the “healthiness” of fresh, frozen, raw, cooked, and canned vegetables. My hope is that we can all agree it is better to eat frozen or canned vegetables than to eat no vegetables at all.

Hours after being harvested, vegetables are canned through a process requiring high levels of heat to preserve the food. This high heat also prevents pathogens that cause foodborne illnesses. In many respects, canned vegetables are as nutritious as fresh or frozen. Some canned foods actually contain more vitamins and minerals than the fresh options.

The best benefits of canned vegetables are that they have a longer shelf life than fresh vegetables and generally cost less.

Three of my favorite canned vegetables are sweet whole kernel corn, water chestnuts, and sliced carrots. I eat them as sides to my main protein dish, or add them to my pre-packaged salads or a soup.
